Wild Maine Blueberry Balsamic Reduction

Caprese Salad

Ingredients:

12oz Fresh Mozzarella thickly sliced
1 Large Bunch of Fresh Basil
3 Ripe Tomatoes (Beefsteak of your favorite!)
Pinch of Salt and Pepper
Wild Maine Blueberry Balsamic Reduction

Directions:

Slice tomatoes and Mozzarella. Separate Basil Leaves. Arrange on a platter alternating the tomatoes, basil and Mozzarella. Salt and Pepper to taste. Drizzle Wild Maine Blueberry Balsamic Reduction over the top.

Wild Maine Blueberry Balsamic Glazed Rosemary Chicken

Ingredients:

1/3 cup Wild Maine Blueberry Balsamic Reduction
4 - 6oz Skinless Chicken Breasts (pounded)
2 Shallots, sliced thinly
1 Tablespoon Coarsely Chopped Fresh Rosemary
1/4 cup Maple Syrup
2 Tablespoon Butter
Salt and Pepper to taste

Directions:

Preheat oven 350 degrees
Melt 1 tbsp butter in a medium pan. Season chicken with salt, pepper and rosemary and add to pan. Brown both sides of chicken, remove from pan and set aside. In the same pan, melt the remaining butter and add shallots. Cook until carmelized, approx 3-5 minutes. Add maple syrup and Wild Maine Blueberry Reduction, cook on low for 5 minutes. Place chicken in a 9x9 pan and coat with liquids. Bake for 30 minutes or until the chicken has reached an internal temperature of 165 degrees. Garnish with a fresh sprig of rosemary.

Wild Maine Blueberry Chipotle BBQ Sauce

Baby Back Ribs with Wild Maine Blueberry Chipotle BBQ

Ingredients:

1 rack baby back pork ribs
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp course black pepper
1 tsp sea salt
12oz bottle Wild Maine Blueberry Chipotle BBQ Sauce

Directions:

Mix all dry spices together. Place ribs on a sheet pan andrub on both sides of the ribs. Wrap tightly with foil and place in the refrigerator overnight. Preheat grill at a medium heat. Let ribs sit out for 20 minutes before putting them on the grill. Flip ribs every 20 minutes for approximately 3 hours. During the last 20 minutes begin brushing on BBQ sauce. Ribs should be cooked to an internal temperature of 180 degrees. Serve with extra Wild Maine Blueberry Chipotle BBQ for dipping.

Grilled Blueberry BBQ Salmon

Ingredients:

4 - 6 oz portions of fresh salmon
1/2 tsp sea salt
1/2 tsp black pepper
2 tsp Wild Maine Blueberry Balsamic Reduction
1 cup Wild Maine Blueberry Chipotle BBQ Sauce

Directions:

In a small sauce pan, add BBQ sauce and balsamic reduction until it begins to gently boil. Remove from heat. Preheat grill to a high heat. Season salmon with salt and pepper. Cook approx 5 minutes on each side. Using a pastry brush apply BBQ sauce mixture to salmon and cook for an additional 3 minutes. Cook to desired temperature. Serve salmon with a drizzle of the remaining mixture.

Wild Maine Blueberry Caramelized Onion Rosemary Chutney

Wild Maine Blueberry Caramelized Onion Rosemary Chutney Baked Brie

Ingredients:

1 medium wheel of Brie cheese
1/2 box (one roll) of puff pastry
1 egg
1 jar Wild Maine Blueberry Caramelized Onion Rosemary Chutney

Directions:

Bring puff pastry to room temperature before rolling out. Remove extra rind from one side of Brie. Add one jar of chutney to the top side of the Brie that has the rind removed. Wrap puff pasty around Brie and place in a sprayed pan. Whip egg and brush on puff pastry with pastry brush. Bake at 350 degrees for 1/2 hour or until puff pastry is lightly browned.

Please note: Wild Maine Blueberry Roasted Cranberry Chutney can be used in this recipe as well depending on your taste.

Baked Chicken Thighs with Mushrooms and Wild Maine Blueberry Caramelized Onion Chutney

Ingredients:

4 lbs Skinless Chicken Thighs
3 Tbsp Olive Oil
1 Tbsp Sea Salt
2 Tbsp Ground Pepper
6 cloves fresh minced garlic
1 medium sized Vidalia onion thinly sliced
16oz sliced Bella mushrooms
1 Tbsp sliced fresh rosemary
1 jar Wild Maine Blueberry Caramelized Onion Chutney

Directions:

Preheat Oven to 350 degrees. Chicken thighs should be sprinkled with salt and pepper and browned in olive oil over high heat. Set aside. Saute garlic, onion and mushrooms. Combine chicken, onion mixture and top with jar of chutney in a baking pan and bake for 40 minutes.

Wild Maine Blueberry Bourbon Sweet Sauce

Grilled Salmon with Wild Maine Blueberry Bourbon Sweet Sauce

Ingredients:

1 1/2 lbs Salmon
Pinch of salt and pepper
3 Tbsp Fresh chopped parsley
1/2 lemon juiced
1 bunch Swiss chard coarsely chopped
1 1/2 tbsp olive oil
1/2 cup white wine
2 tbsp Butter
4 cloves minced garlic
1/2 jar Wild Maine Blueberry Bourbon Sweet Sauce

Directions:

Preheat oven to 400 degrees. Sprinkle salmon with salt and pepper. Warm olive oil and sear salmon on high heat on both sides until brown. Put in oven for 10 minutes, drizzle Wild Maine Blueberry Bourbon Sweet Sauce over salmon in the last 2 minutes. In a separate pan, melt butter, add garlic and sauté until brown. Add Swiss chard, white wine, parsley, juice from lemon and sauteed until chard is wilted. Serve salmon over Swiss chard and lightly drizzle bourbon sauce over the top.

Wild Maine Blueberry Serrano Pepper Sauce

Wild Maine Blueberry Serrano Pepper Sauce Chicken Wings

Ingredients:

24 Chicken Wings
1 tbsp salt
1 tbsp pepper
1 tbsp garlic powder
1 tbsp onion powder
1/2 jar Wild Maine Blueberry Serrano Pepper Sauce

Directions:

Preheat oven to 400 degrees. Mix all dry ingredients and sprinkle over chicken wings. Roast chicken wings for 30 minutes. Drizzle Serrano pepper sauce over wings and continue to bake for 15 minutes.

Wild Maine Blueberry Roasted Cranberry Chutney

Roasted Turkey Sandwich with Wild Maine Blueberry Cranberry Chutney

Ingredients:

1/2 jar Wild Maine Blueberry Roasted Cranberry Chutney
12 oz roasted turkey breast
1/4 lb havarti cheese
1 sliced beefsteak tomato
1 loaf French bread
1/2 cup mayonnaise
1/4 cup Dijon mustard
Pinch salt and pepper
2 tsp dried tarragon
Romaine or Bibb lettuce

Directions:

Cut loaf of bread in half lengthwise. Mix mayonnaise and spices in a separate bowl. Spread mixture on bottom half of baguette. Add turkey and top with cheese. Top with Wild Maine Blueberry Roasted Cranberry Chutney, lettuce and tomato slices. Yum!

Wild Maine Blueberry Roasted Cranberry Cream Cheese Spread

Ingredients:

1 jar Wild Maine Blueberry Roasted Cranberry Chutney
1 16 oz container of whipped cream cheese

Directions:

In a large bowl, mix chutney and cream cheese together. Serve as an hor d'oeuvres or topping for bagels!

Wild Maine Blueberry Honey Sauce

Wild Maine Blueberry Honey Yogurt Granola parfait

Ingredients:

1/4 cup Wild Maine Blueberry Honey sauce
1 cup plain Greek yogurt
1/2 cup granola

Directions:

Combine honey sauce and yogurt and top with granola!

Roasted Salmon with Wild Main Blueberry Honey Sauce

Ingredients:

1 lb Salmon
1/4 jar Wild Maine Blueberry Honey Sauce
Pinch Salt and Pepper

Directions:

Preheat grill to high heat. Dust salmon with salt and pepper. Place skin side down on grill. Brush salmon liberally with Wild Maine Blueberry Honey Sauce liberally on each cooking for a total of 4 minutes on each side. Cook to desired temperature.

Wild Maine Blueberry Honey Horseradish Sauce

Baked Haddock with panko bread crumbs and wild Maine blueberry honey horseradish sauce.

Ingredients:

1/2 jar Wild Maine Blueberry Honey Horseradish Sauce
2 lbs Fresh Haddock
1 Tbsp Butter
1/4 cup Panko Bread Crumbs

Directions:

Place Haddock in a greased pan. Sprinkle with panko bread crumbs and dot butter on top. Cook for 10 minutes at 400 degrees. Drizzle Wild Maine Blueberry Honey Horseradish Sauce over the top of fish and cook for an additional 3 minutes. Yum!

Wild Maine Blueberry Bloody Mary Mix

The Perfect Blueberry Bloody Mary!

Ingredients:

Blueberry vodka or your favorite plain vodka
1/2 tsp prepared Horseradish
1 1/2 cup Blueberry Bloody Mary Mix
Pinch of Salt and Pepper
Lemon slice
Green Olive
Celery Stick
1/2 tsp celery salt

Directions:

Mix Horseradish, salt, pepper and celery salt. Add to Bloody Mary mix and vodka. Stir and mix with ice. Garnish with lemon, olive and celery.Optional garnish: bacon or shrimp!
